Professional Chefs Programme NVQ Level 1 and 2

Course Description:
This full-time programme is designed to produce the future crafts people or the catering industry. It concentrates on:
- Food preparation
- A broad range of cookery methods
- Pastry work
Plus the theory necessary to understand what the following areas:
- Food safety studies, you must pass the Level 2 Food Hygiene Certificate associated with this during the academic year.
- IT and other core skills such as communications and numeracy.
- Private study, as most of your time at College will be spent working in the kitchen; this means that most of the study necessary to underpin your practical skills will need to be done in your time, in our IT facilities.
This course is designed for you to achieve a City & Guilds qualification with the maximum enjoyment. In addition, your progress will be motivated via tutorials and discussions with your specialist subject lecturer. Progression to the second year of the programme depends on what you have achieved during your first year and on punctuality, attendance interest and effort demonstrated. It is not automatic and you will need to re-apply for the second year towards the end of your first year at College.
Course Content:
The course is 75% practical, this gives the students ample opportunity to develop and refine their practical skills with the maximum enjoyment, more time spent in chefs whites!
The course comprises of units, unit success is measured by competence in process and understanding of the principle of preparation/cookery undertaken. Students will collect evidence via a diary in preparation for summative assessment, the assessment process is by demand, but the student must show a degree of competence before requesting formal summative assessment to be undertaken.
The course is assessed by continuous practical assessments, theoretical testing is via online multi-choice questions.

Entry Requirements:
Satisfactory completion of compulsory school education with demonstration of practical ability, preferably including some work experience within the hotel and catering industry. We interview all applicants and a school or other reference will be sent for.
Assessment:
Continuous practical and theory assessment throughout the year. No final examination involved.

Course Progression:
Level 1 have the opportunity to progress to level 2. Candidates who successfully complete level 2 may be able to progress to a level 3 programme at the Colchester Campus.
