Course Description:

The programme continues the development of professional cookery skills to an advanced level with associated knowledge. Students will need to be well motivated and committed to a career within the catering industry.

Students will refine their skills through practical work in the patisserie, larder and production kitchens. Classroom activity will include assignments, restaurant and dish evaluation and online research. There are coursework and practical assessments throughout the year and two practical assessments at the end of the year.

In addition, students will study at least one Functional Skill in English, maths or ICT as part of their main programme.

Course Content:

The course comprises of 11 units, six of which are practical and designed to develop and refine technical skills. There are also five units covering areas such as:

  • Sourcing Produce
  • Gastronomy
  • Supervising Food Safety

Entry Requirements:

Satisfactory completion of the Level 2 Professional Cookery programme. Demonstration of good practical skills, including some work experience within the hotel and catering industry.

Career Opportunities:

Employment as a chef in the hotel and catering industry, with the potential to rise to a senior position on an accelerated career path.

Foundation or Honours degree.
